A Teenager's Party Menu
Hello everyone. I hope all is well. Sorry my writing has sporadic. I’ve been
a bit under the weather. No excuse for a girl of my demeanor however. It is
time for my son’s birthday party. I know lot’s of you have kids or just like
to eat kiddie food like me. Just don’t spike the punch til after the kids leave.
I could give you a recipe for play-doh but gross. It’ll get all over your house.
Besides my kid is becoming a teenager. Maybe we’ll invite girls. Ohh! Bare with
me next week, I’m moving. Yes someone finally bought my house. We’ll have a
moving party next week (to get your friends to help!) Happy Birthday!

Famous Ice Tea
11/2 c. sugar
6 regular tea bags
4 cups boiling water
1 six oz. can frozen orange juice (thawed and undiluted)
1 six oz, can frozen lemonade
Steep tea bags in boiling water for five minutes. Discard tea bags. Add sugar
and stir. Add thawed juices and eight cups water. Add up to two more cups water
to taste. Add lemon and or mint to glasses. Makes one gallon.
Texas Torte
2 eggs beaten
2 tbs. Flour
1/2 tsp. Salt
1/3/ c. milk
1 4oz. can chopped green chilis
1/2 lb grated sharp cheddar cheese
1/2 lb grated Monterey jack cheese
Add flour salt and milk to beaten eggs. Beat well. Add remaining ingredients
and mix. Pour into flat well greased 8 x 12 in. pyrex baking dish. Bake at 350
degrees for 35 minutes. Cut into squares and serve.
Mexican Nacho Dip
8 ozs. Sour cream
1/2 package taco seasoning
2 ripe avocados
1 Tbs. Lemon juice
1/2 c. mayonnaise
4 oz. chopped black olives
2 bunches green onions chopped
1 c. tomatos chopped and drained.
9 oz. can of bean dip
8 oz. grated sharp cheddar
Combine sour cream and taco seasoning and refrigerate overnight. Mash avocados
and blend with lemon juice and mayonnaise. Combine onions olives and tomatoes.
Layer ingredients as follows.

Cheese
This is attractive served in a glass bowl with tortilla chips.
Chicken Tortilla Casserole
1 10 oz. can of cream of mushroom soup
1 10oz. can cream of chicken soup
1 c. sour cream
1 onion chopped
1 10 oz. can diced tomatoes with green chilis
dash of Tabasco.
Six large flour tortillas cut into strips.
5 boneless chicken breasts cooked and cut into pieces.
10 oz. shredded sharp cheddar cheese
Combine the soups and sour cream in a medium bowl and mix well. Add onions
tomatoes and tobasco. Spread a small amount of mixture over the bottom of a
3 quart baking dish. Arrange a layer of tortillas strips over the sauce and
then a layer of chicken over the strips. Top with a layer of the soup mixture,
then a layer of cheese. Repeat layers until the ingredients are used. Bake at
350 for 45 minutes.
Bunuelos
4 Flour Tortillas
3 Tbs. Ground cinnamon
6 to eight Tbs. Sugar
Vegetable Oil for frying
Ice Cream
Cut each tortilla in a star shape. Mix cinnamon and sugar together. Heat the
oil in a shallow wide frying pan. Fry tortillas until 1 side is golden and then
turn and fry the other side. Remove and drain on paper towel. Sprinkle generously
with cinnamon and sugar. Serve with ice cream.
Of course no Mexican birthday celebration can be without a piñata filled with
